GUINNESS® Christmas Pudding

GUINNESS® Christmas Pudding


Serves 10-12

  • 10oz fresh breadcrumbs
  • 8oz soft brown sugar
  • 8oz currants
  • 10oz seeded raisins (chopped)
  • 8oz sultanas
  • 2oz mixed peel (chopped)
  • 10oz shredded suet
  • ½ level teaspoon salt
  • 1 level teaspoon mixed spice
  • Grated rind of 1 lemon
  • 1 dessert tsp lemon juice
  • 2 large eggs (beaten)
  • ½ pint milk
  • ½ pint GUINNESS® Draught

Mix together in a large basin all dry ingredients. Stir in lemon juice, eggs, milk and GUINNESS®. Mix well and turn two 2½ pint well greased pudding basins. Tie pudding cloths over puddings, or cover tightly with greaseproof paper and foil. Leave overnight. Steam for about 7½ hours. If not eating the puddings immediately, cool, re-cover and store in a cool place, When required, steam for a further 2 - 3 hours before serving.
